OUR MILK

  • What does permeate free mean?

    Permeate is the lactose, water and minerals that get separated out when milk is filtered. It's a legal ingredient, and it's commonly added back into milk to keep protein and fat levels consistent all year round, because milk naturally varies with the season and the feed.


    We don't add it back. Our milk changes a little through the year, the way milk does. We think that's fine.


  • What does non-homogenised mean and why is Cream On Top different?

    Homogenising forces milk through a fine nozzle at high pressure, breaking the fat globules down so they stay evenly mixed and the cream never separates.


    Cream On Top skips that step. The cream rises to the top of the bottle the way it did before homogenising was invented. 


    Shake it through, or pour the top off and use it as cream.


    Our Full Cream and Reduced Fat milks are homogenised.


  • Is your milk really 100% South Australian?

    Yes. It's farmed, bottled and distributed here.

OUR YOGHURT

  • What does pot set mean?

    Most yoghurt is fermented in a large vat, then stirred and packed into tubs. Pot set yoghurt is packed first and cultured in the tub it's sold in, so it sets undisturbed.

    It takes longer and it's less efficient. It also gives you a firmer texture that hasn't been broken up by stirring.

  • What's in your yoghurt?

    Milk, live cultures and time.

    Yes. They're grass fed and free to roam.

  • What's the difference between organic and bio-dynamic?

    Organic farming avoids synthetic fertilisers, pesticides and herbicides. 


    Bio-dynamic goes further and treats the farm as a single living system, managing soil, pasture, animals and compost together and working to a seasonal calendar.
